Tart & Sweet Blueberry Lemonade

It hurts me to say that some days here are just too hot to think about food! When this humid, soupy summer air starts to weigh me down, all I want to do is drink anything iced cold. This colorful Blueberry Lemonade is the perfect refresher for the sweltering summer heat.

Now, I grew up on Kool-Aid packets of pink lemonade with way more sugar than I'd like to admit, but this lemonade recipe is so simple and delicious, it's worth the squeezin'! The slightly sweet, tart lemonade starts with a quick blueberry simple syrup, gets a big hit of fresh squeezed lemon juice and is topped off with some cool water. In a glass full of crushed iced, this is one amazingly refreshing combo! This is a non-boozy recipe, even though this stuff is kinda screaming for some vodka. But sometimes a gal just needs to hydrate!

Blueberries

The first thing you'll want to do is make a quick simple syrup with sugar, water, blueberries & a little lemon zest. In a small saucepan, pour in the sugar, blueberries and zest from about half of one of your lemons. Give the blueberries a gentle muddle to help them release all of their blueberry deliciousness! Add in a cup of water and heat on medium, stirring occasionally, until all of the sugar dissolves. After the syrup cools, you can strain it right into a pitcher or if you're making this ahead of time, into an airtight container.

Blueberry Simple Syrup

Squeeze the lemons and add the juice to your pitcher. You should get around 3/4 cup of juice from your lemons. Add another five cups of cool water to the pitcher and give it a little stir. Pop the lemonade into the refrigerator until you're ready to drink. 

Blueberry Lemonade

I love this lemonade poured over a big glass, full to the top with crushed ice. Finish it off by adding some blueberries and thin slices of lemon straight into your glass. This colorful concoction looks a little like dragonfruit and tastes lemony tart with a slightly sweet blueberry finish.
