Grilled Summer Corn

Fresh corn is everywhere in these smoldering summer months and there are so many ways to enjoy this deliciously affordable veggie! One of our favorite things to do with fresh corn is to give it a nice little char on the grill. There are a ton of different options for seasoning, but this grilled corn gets brushed with a little oil, smoked paprika and garlic powder, giving it a smoky sweet flavor that’s begging for a squeeze of lime!

There are a few different grilling methods you can try:

  • Grilling corn with the husk on

  • Grilling without the husk, wrapped in foil

  • Grilling without the husk, straight on the grill

Each method will give you sweet, delicious corn, but the last technique is a must if want corn speckled with roasty, toasty kernels!

The smoky, nutty flavor that the corn develops straight on the grill, without its husk, is the perfect complement to pretty much anything else you’d be throwing on the grill this summer. It’s our go-to method for grilling corn.

First, you’ll want to shuck the corn by pulling the husk and silk from the cob. One trick for getting all of those silky fibers off quickly and cleanly is to cut off the furry end of the corn and microwave for about 3 minutes. Let them cool for a minute, then peel away the husk and silk. They’ll be silky smooth!

You can drop the cobs straight onto a medium-high grill, but this time we’re going to brush them with oil (avocado or grapeseed), smoked paprika, garlic powder, salt & red pepper.

Grill for about 10 minutes, turning every couple minutes to get a char on all sides. Stay close and keep your eyes on those ears, so they don’t burn!

A squeeze of lime at the end is the perfect finishing touch. If you want to push this more into the Elote zone, brush the cobs with mayo right off the grill and finish with some cotija cheese.

If you’re grilling corn to go with finger-licking BBQ, leave this corn on the cob! If not, try cutting off the kernels and serving it as a family style side. No matter how you eat it, it’s a perfect summer side dish!

This smoked paprika rubbed grilled corn makes the perfect summer side dish. Grilling fresh corn brings out a subtle smoky sweetness that is begging for a squeeze of lime!

ingredients:

  • 6 ears fresh corn
  • 3 tbsp. avocado or grapeseed oil
  • 1/8 tsp. smoked paprika
  • 1/8 tsp. garlic powder
  • pinch salt and crushed or ground red pepper (optional)
  • Lime wedges for squeezing 

instructions:

How to cook Grilled Summer Corn

  1. Shuck the corn, removing the husk and silk. *Optional - You can easily and cleanly remove them by microwaving for about 3 minutes, then carefully peel away the husk and silk.
  2. In a small bowl, combine oil, smoked paprika, garlic powder, salt & red pepper. Brush oil and spices on all sides of corn and reserve any leftover. 
  3. Heat grill to medium-high. Grill corn for 10 minutes, turning every couple of minutes. Stay close and keep and eye on those ears so they don't burn! 
  4. Remove from grill. Brush with any additional oil and spices and add a squeeze lime.
  5. Optional - cut corn from cobs for a family style side dish. 

NOTES:

If you don't have avocado oil, you can use grapeseed or any oil with a higher smoke point.
