Marinated Grilled Chicken Skewers

The hot, hot heat of summertime is perfect for firing up the grill. I love grilled chicken, but to me, it can always use a good marinade to really bring it to the next level. Even if you only have time for a quick, 5 minute marinade, your tastebuds will thank you! The popular bird is extremely versatile and can take on an endless number of taste combinations. In our house, one of our favorite ways to make chicken is skewered on the grill.

Skewers are a super easy way to stretch your chicken a little farther, especially if you are feeding a crowd. Somehow, eating a few tasty chunks of chicken from a skewer seems as filling as eating a whole chicken breast. You can stretch it even further by adding some mushrooms, onions and peppers to the skewer. Or you can chop the pieces up and toss on top of a salad with this Tangy Chipotle Honey Vinaigrette!     

Chicken Marinade

This marinade is fairly simple to throw together and makes a huge difference in the flavor of your chicken. The combination of spices like paprika and garlic powder combined with the fresh punch of parsley and green onion and the slight tang of the vinegar will leave your marinated chicken ultra tender and full of flavor. You can quickly combine the ingredients in a stainless or glass bowl or in a ziplock bag, cover or seal and let all of the flavors come together for at least twenty minutes, ideally up to two hours.

After your chicken has marinated, you can start skewering. We used to use bamboo skewers for this job, but we were going through so many, we finally we decided to try out some reusable skewers. After trying out a few different types, we found this style to work the best. The flat design makes your chicken less likely to slide and sway on the stick.

Get your grill fired up and let the chicken cook for 10 to 15 minutes, depending on how big your chicken pieces are. If you use the stainless steel skewers, be careful when you take them off the grill and slide the chicken off. They’ll be hot! We like to use gloves like these when handling the hot skewers. Let them rest for a few minutes to let all the juices settle and the skewers will cool down. Then you can dig in!
