Refreshing Mango Margarita

There’s nothing quite like a good margarita! I’m not talking about a plastic bottle tequila that tastes like a hangover in a bottle, drowned in too sweet & sour mix. While I’m no stranger to the cheap and dirty “you’re gonna regret this in an hour” margarita, there’s a time and place for it, and I hope that time has *mostly* passed with my 20’s.

A good margarita…one made with quality tequila, lots of fresh squeezed lime juice, some good orange liquor, like Cointreau, and absolutely NO bottled sweet & sour mix…is a beauty worth beholding. It is simple and fresh and let’s each flavor peak through....while putting just a little bit of hair on your chest at the same time.  Ever since our trip to Mexico back in December, I’ve been craving margaritas!

While I usually go for a more classic version, this batch is loaded with juicy, ripe mango. Look, I’m a sucker for a good sale and these guys were a steal at the grocery store, so they’re going in! This ‘rita is on the rocks, but if you're a fan of frozen, you can blend all of the ingredients together with a couple handfuls of ice.

Cut the tip off of a super ripe mango and peel it with a peeler. Slice off large chunks of the fruit, moving around the pit. It can be a slightly messy job cutting up the mango, but just get off as much as you can, then you can treat yo’ self and bite off whats left!

Add the mango to a blender or food processor and squeeze in the juice from 2 limes. If you like a little jalapeño, you can add one in that’s been deseeded with all of the fleshy white parts removed. I added some to this batch, but I’m not always in the mood for that flavor in my margie. So you can decide what you're feeling! Add in a few ice cubes to cool the mix down and blend until the mango is smooth. This mango mixture makes enough for 4-6 drinks. If you have any leftover, you can freeze it in a silicone ice tray for a boozy little popsicle.

Fill a rocks glass with crushed ice. Add in 2 oz. of Tequila (we used Espolón Tequila Blanco) and 1 oz. of Cointreau (or your favorite triple sec/orange liquor), then topped it off with the mango mixture. Give it a stir with a cocktail spoon. Finally, a little lime garnish and a cheers before you drink!
