Tangy Chipotle Honey Vinaigrette

Of all the fast food eats in all the land, I have to say Chipotle is one of my absolute favorites! It’s quick, fresh and pretty darn cheap for the heaping amount of food you get. Though I do switch things up every now and then, I’ve got my favorite combo down….steak burrito bowl, brown rice, veggies, yummy fresh salsa, corn, sour cream and lettuce…and I love to splash a little Tabasco green pepper sauce on top. Talk about a belly full of goodness!

I also like to get the same flavor combo in salad form with their tasty Chipotle Honey Vinaigrette. The dressing combines the intense flavors of spicy chipotle peppers with garlic, honey, red wine vinegar, oil and spices. It's smoky and slightly sweet with a nice tang to it. It’s seriously delish! You can get it for free with your bowl or burrito too, so ask for some next time you're there!

I couldn’t limit myself to only having the dressing when we eat at Chipotle, so I knew we had to recreate the sweet nectar at home. Chipotle’s website lists the main ingredients for the dressing so after tinkering around with the quantities and adding some fresh herbs, this is a recipe that we ended up with. 

Chipotle Honey Vinaigrette

This version is not quite as sweet as Chipotle’s and has a little more freshness from the herbs, but I don’t think they make or break the recipe. If you don’t have the fresh herbs on hand, feel free to leave them out. As always, play around with the quantities and make it perfect for your taste!

The recipe is really easy to throw together. Combine all of the ingredients in a blender or food processor. I love using this little Ninja Express Chop. We've had it for years and it's still going strong! While it's a great size for dressing or sauces, I would eventually like to upgrade to something that can hold a little more, like this one!

*Note - These chipotle peppers in adobo sauce can typically be found in a smaller can in your grocery store's Hispanic food aisle, usually for $3 or less. The can comes with more than you need for this recipe, so you can either make a larger batch or save the rest to use with sauces and dips, chili or stews...Chipotle Mayo on a burger with a smoky cheese...yes please!
