Quick Chocolate Cracker Candy

This quick Cracker Candy is a great last minute sweet treat for Thanksgiving, which is what just happened in our kitchen, as you can see! This addictive sweet & salty treat is usually made with Saltine crackers, pushed tightly against each other on a baking sheet. We happened to have a full sleeve of these round butter crackers in the pantry, which made for some nice crunchy little bits in the spaces between the crackers...happy accident! You'll also need a stick (1/2 cup) of butter, 1/2 cup brown sugar, about 1½ cups of semi-sweet chocolate chips, and some chopped pecans. 

Cracker Candy

Preheat oven to 350°F. Spread 30 Butter Crackers closely together on a foil lined baking sheet. Melt a stick (1/2 cup) of butter and 1/2 cup brown sugar on med-low heat until it comes to a low boil. Continue boiling on med-low heat for 3 minutes. Pour evenly over the top of the crackers and bake for 5 minutes.

Right out of the oven, sprinkle chocolate chips over the top of the crackers and let it sit for a few minutes. All that residual cracker heat will melt those choco chips in no time! Spread the chocolate around with the back of a spoon to evenly coat all of the crackers. Top with the nut of your choice (I love pecans!) and a little sprinkle of sea salt.

Move pan of cracker candy to the refrigerator to set. Once the chocolate sets, carefully break the crackers apart, and be sure to get all of those loose pieces of crunchy sweetness that hardened in the spaces between!  I like to keep them stored in the refrigerator in between breaking off bites! They taste the best to me when they have a little chill to them.

These chocolatey treats are the perfect mix of sweet & salty!

ingredients:

  • ~30 butter crackers or saltines 
  • 1 stick (1/2 cup) unsalted butter 
  • 1/2 cup light brown sugar
  • 1 1/2 cups chocolate chips
  • 1 cup chopped pecan pieces

instructions:

  1. Preheat oven to 350°F.
  2. Arrange crackers closely together on a foil lined baking sheet.
  3. Heat butter in a saucepan on medium-low. 
  4. Once butter is melted, mix in brown sugar and bring to a soft boil on medium/low. Boil for 3 minutes without stirring. 
  5. Spread the mixture smoothly over crackers and bake for 5 minutes.
  6. Right out of the oven, sprinkle chocolate chips over the top and let it sit for a couple minutes. The residual heat will melt the chocolate. 
  7. Spread chocolate evenly over the crackers with the back of a spoon or spatula.  
  8. Top with pecans or topping of your choice. Store in the refrigerator for a couple hours or until chocolate sets. 
  9. Store in refrigerator.

NOTES:

This recipe is totally customizable! You can change it up by using graham crackers instead of salty crackers.

Or, why not try some minty chocolate chips or white chocolate chocolate chunks with peppermint! Top them off with shredded coconut, walnuts or flaky sea salt.
